taco stuffed shells

At least once a week, we have taco night to suit our youngest son. Well, I decided to change it up a little since I had a box of jumbo shells. He loved them!

Ingredients

  • 15 - uncooked jumbo pasta shells
  • 1/2 pound lean ground beef
  • 1/2 pound ground pork
  • 1/2 medium onion, chopped
  • 1 package low-sodium taco seasoning mix
  • 1 cup salsa
  • 1 cup frozen corn
  • 1/2 cup canned black beans, rinsed and drained
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon ground cumin
  • 1 cup shredded taco or Mexican cheese blend
  • TOPPINGS
  • - sour cream
  • - sliced black olives
  • - sliced green onions
  • - sliced jalapeno peppers

How To Make taco stuffed shells

  • Step 1
    Cook pasta shells according to package directions; drain. Preheat the oven to 350 degrees F.
  • Step 2
    Cook the beef and pork over medium heat halfway. Then add your onions. Cook until the meat is no longer pink and the onions are tender. Drain any excess fat.
  • Step 3
    Add the taco seasoning, salsa, corn, beans, basil, and cumin. Mix well.
  • Step 4
    Stuff each shell with a spoonful of the meat mixture. Place in a 13 x 9 baking dish coated with cooking spray.
  • Step 5
    Sprinkle with cheese. Cover and bake at 350 degrees F for 25 to 30 minutes.
  • Step 6
    Top with sour cream, additional salsa, olives, and green onions.
