Sweet Onion Ham

Lauren Conforti

I had some leftover ham that I sliced thin, intending to use for sandwiches. But I made this instead! I wish I had shown more onions in the picture... I put a lot of onions in this and I think it goes well with the sweetness of the pineapple, and the saltiness of the ham. A nice blend!

1Preheat oven to 350 degrees.
2In a small fry pan, saute the onion slices in olive oil until tender & just starting to turn golden.

4Spread the sauteed onions over the top. Add 1/3 brown sugar.
5Layer the rest of the ham slices. Top with the remaining brown sugar.
6Lay pineapple slices across the top of the ham. Drizzle about 1/2 of the pineapple juice over the layers.
7Cover with foil & bake for 45 minutes, or until hot & juice is bubbly. Serve with sauce spooned over the ham slices.
