sweet onion ham

I had some leftover ham that I sliced thin, intending to use for sandwiches. But I made this instead! I wish I had shown more onions in the picture... I put a lot of onions in this and I think it goes well with the sweetness of the pineapple, and the saltiness of the ham. A nice blend!

Ingredients

  • 1/4 - of a whole cooked ham, sliced 1/4 inch or thinner
  • 2 medium onions, halved & sliced
  • 1 can pineapple slices, reserve juice
  • 1/4 cup dark brown sugar
  • - olive oil

How To Make sweet onion ham

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    In a small fry pan, saute the onion slices in olive oil until tender & just starting to turn golden.
  • Step 3
    In an 8 x 8 inch oven safe casserole dish, layer 1/2 of the ham slices, topped with 1/3 of the brown sugar.
  • Step 4
    Spread the sauteed onions over the top. Add 1/3 brown sugar.
  • Step 5
    Layer the rest of the ham slices. Top with the remaining brown sugar.
  • Step 6
    Lay pineapple slices across the top of the ham. Drizzle about 1/2 of the pineapple juice over the layers.
  • Step 7
    Cover with foil & bake for 45 minutes, or until hot & juice is bubbly. Serve with sauce spooned over the ham slices.
