Ingredients
- 3 tablespoons (rub) caribbean jerk seasoning (mccormick)
- 2 tablespoons (rub) light brown sugar
- 1 tablespoon (rub) salt
- 1 teaspoon (rub) pepper
- 1 cup (sauce) apricot-pineapple preserves (smuckers)
- 3/4 cup (sauce) pineapple juice
- 3/4 cup (sauce) barbecue sauce (jack daniels spicy original)
- 1 teaspoon (sauce) caribbean jerk seasoning
- 1/2 teaspoon (sauce) salt
- 1/4 teaspoon (sauce) pepper
- 7 pounds 3 slabs baby back pork ribs
How To Make sweet island ribs

Step 1RUB: Combine all ingredients in a small bowl.

Step 2Rinse ribs, and pat dry. Remove thin membrane from back of ribs by slicing into it with knife then pulling. Sprinkle ribs evenly with Sweet Island Rub and rub into meat. Let ribs stand at room temperature for 30 minutes.

Step 3SAUCE: Stir together all ingredients in a medium saucepan. Bring to boil over medium high heat; reduce heat to medium low and simmer stirring occasionally for 20 minutes. (Reserve 1 cup of sauce)

Step 4Bake ribs in oven at 350 for 1.5 hours basting twice with reserved 1 cup Sweet Island Sauce during the last 30 minutes. Serve with remaining sauce.
