    2 to 2 1/2 lbs. boneless pork loin, trimmed and tied

    24 whole pistachio kernels
  • ·
    4 to 5 large garlic cloves, cut into 24 pieces

    honey glaze:
  • ·
    2 tbsp. honey
  • ·
    2 tbsp. dry sherry
  • ·
    1 t. fresh rosemary
  • ·
    1/8 t ground cinnamon
  • ·
    1/8 t. ground pepper
  • ·
    sherry sauce:
  • ·
    1 tbsp. honey
  • ·
    3 tbsp. dry sherry
  • ·
    1/4 t. fresh rosemary

How to Make Sweet Glazed Pork Roast with Pistachios


  1. Preheat oven to 325. With sharp knife, make 24 slits, 1 inch deep over entire pork roast. Insert 1 pistachio kernel and 1 piece of garlic into each slit. Roast for 1 1/2 to 2 hours or until the internal temperature is 155. To make the glaze, mix all ingredients in small bowl and mix well. Baste pork with glaze several times during roasting. Transfer roast to a serving platter; cover with foil and let stand for 20 minutes. To make the sauce, mix all ingredients in a small pan. Cook over medium heat for 1 minute. Top pork with sauce and serve at once. Makes 6 to 8 servings.
