WE ARE GOIN TO INDY FOR CHRISTMAS AND STAYIN IN HOTEL WITH A POOL[SWIMMIN IS PART OF NIECES GIFT] ANYWAY NEEDED TO MAKE SOMETHIN THAT WAS MAKE AHEAD AND TRAVELS WELL...ALSO SOMETHN THAT NEEDS VERY LITTLE PREP ONCE THERE.....I CAME UP WITH THIS TODAY..I CAN'T WAIT TO TRY IT RIGHT NOW MEAT IS IN FRIDGE WII MAKE INTO BALLS LATER AND BAKE THEN FREEZE TO TAKE WITH US... WILL ALSO MAKE SAUCE AND FREEZE SO ONCE THEY OPEN THE 2 BAGS AND INTO CROCK POT WHILE WE SWIM....

Ingredients
- 3 pounds ground beef
- 2 pounds pork sausage
- 2 cups apple jax cereal,crushed well
- 1 each large red and green apple,grated fine
- 1 each large red and green apple,peeled,diced
- 1/2 cup no sugar added apple juice
- 1 cup no sugar added applesauce
- 1 bunch green part only,green onions
- 4 cloves garlic
- 1/2 cup dried celery leaves
- 2 tablespoons dried chives
- 4 large eggs,beaten
- SAUCE
- 2 cans [12 oz] frozen apple juice,thawed,undiluted[is 4 cups]
- 2 cups no sugar added applesauce
- 2 cups no sugar added apple juice
- 1/2 cup apple cidar vinegar
- 1 1/2 cups splenda brown sugar
- 1 tablespoon apple pie spice
- 1 teaspoon ground ginger

Step 1this is a make ahead recipe and freeze...freeze meatballs and sauce in seperate freezer bags then when ready to use jus put both in crock pot and 4 hrs later ya have a meal

Step 2put both meats in lg bowl usin yur hands mix and blend well... i used food processor to crush cereal then add to meats next add apples,juice and applesauce mix well

Step 3now put onions,celery leaves,garlic and chives in food processor...chop til onions are in small pieces add to meat mix well now put the eggs in food processor mix til frothy add to meat mix well cover and put in fridge for several hrs[up to overnight]

Step 4when ready to cook shape meat into 1 in balls place on sprayed with non stick cookie sheet[may take more than one sheet] once sheet full put into pre heated 375 degree oven cook for15min let cool bot 15 min then put on platter to cool in fridge once cool put into gallon size freezer bag and put in freezer[be sure and label what it is and the date u made it]

Step 5make sauce put all sauce stuff in med size sauce pan bring to boil on high heat then reduce to med low cook and stir til it reduced by 1/3 and has got syrupy turn off let cool to room temp than put in freezer bag label and date put in freezer[i added bag of sauce to bag with meatballs]

Step 6to serve put bag of meatballs and bag of sauce in crock pot cook on low 3-4 hrs til hot use colored toothpicks to serve and enjoy
