Ingredients

  • 1 - rack (3 1/2 pounds) st. louis-style ribs (membrane peeled from back and patted dry)
  • 1/4 cup light brown sugan
  • 1 teaspoon pepper
  • 2 teaspoons salt
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon espresso powder
  • 1 teaspoon fennel seed
  • 1/4 teaspoon ground star anise
  • 1 - package (8 ounces) fresh figs, coarsely chopped
  • 1 1/4 cups honey
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon freshly ground nutmeg

How To Make sweet and smoky figgy sticky ribs

  • Step 1
    To make rub: In a small bowl, combine 1/4 cup light brown sugar, 1 teaspoon pepper, 2 teaspoons salt, 2 teaspoons garlic powder, 2 teaspoons onion powder, 1 teaspoon espresso powder, 1 teaspoon fennel seed, and 1/4 teaspoon ground star anise. Sprinkle and rub into both sides of rib rack, and set aside at room temperature for approximately 1 hour.
  • Step 2
    To make figgy sticky sauce: In medium saucepan over medium-high heat, combine coarsely chopped figs, 1 1/4 cups honey, and 1 tablespoon fresh lemon juice; bring to boil, and reduce heat to low, stirring frequently until mixture is thick, approximately 1 hour. Stir in 1/4 teaspoon freshly ground nutmeg, cover and set aside.
  • Step 3
    Preheat heat oven or gas grill to low (250 degrees), place aluminum foil ( sprayed with cooking spray) down on grill or on baking sheet for oven, and set ribs, meat side up on foil. Close lid (for gas grill) or cover with foil (for oven) and cook for approximately 3 hours, checking occasionally. Brush sauce onto ribs, cover with aluminum foil, and cook and additional 30 - 45 minutes or until ribs are very tender, let stand for about 5 minutes. Remove ribs from grill or oven, and cut into 4 rib sections
