sweet and creamy sausage and pea pasta romano
This is a great spring pasta. Perfect for the spring peas. This is a huge hit with my boys and one of my ex husbands favorite food ever! I know he misses it! lol. Anyway, it is really easy and packed with flavor, I hope you try it and comment, and love it as much as we do. My 6 year old, who is tough to please said it is pretty good, my 16 year old eats thirds! Let me know what you think, Thanks Monica

Ingredients
- 1 package sweet sausage meat, or sausage casing removed
- 1 - large onion, diced
- 2 tablespoons unsalted butter
- 2 cups frozen sweet peas, thawed (or fresh if you have em)
- 1/4 cup light cream
- 2 cups grated pecorino romano cheese
- - salt and pepper to taste
- 1 pound orecchiette (or any short pasta would be fine)
How To Make sweet and creamy sausage and pea pasta romano

Step 1Put a large pot with water on the stove and bring to a boil, season the water with salt and add the pasta. Cook until al dente

Step 2Chop the onion

Step 3melt some butter in a saute pan and add the chopped onion. Cook the onion until they are goldenly caramelized. Remove them from the pan and set aside

Step 4Add a bit more butter to the pan and cook the sausage until browned and season with salt and pepper

Step 5return onions to pan and combine with the sausage meat.

Step 6Add the cream to the pan and a bit more butter and combine

Step 7add cheese to the pan and combine

Step 8add pasta to the pan and combine

Step 9put peas in and combine and taste for seasoning, add more cheese if you want to, cause you can never have too much cheese. I also add some pasta water to the mixture to help the sauce get nice and creamy

Step 10This is such a great flavorful pasta! yum!
