This sauce recipe was Gramma Juju's and it is amazingly good. Cooked low and slow it becomes more flavorful over the hours which makes it a great crock pot buffet dish. It always gets rave reviews! Get it simmering while you make your meatballs. You can use premade frozen meatballs but why?? With a food processor to do your chopping and the help of a handy lil' melonball scoop you can make your own with better texture and no added junk.

Ingredients

  • SWEDISH MEATBALL SAUCE
  • 1 can cream of mushroom soup
  • 1 1/4 cups sour cream
  • 2 tablespoons red wine, what u do w/the rest of the bottle is up to u
  • 1 1/2 teaspoons parsley flakes
  • 1/4 teaspoon oregano, dried
  • 1/2 teaspoon garlic powder
  • 1 tablespoon caraway seeds
  • MEATBALLS
  • 2 - lg celery stalks with leaves abt 2/3c
  • 1 - med onion abt 2/3 c
  • 1 teaspoon parsley flakes dried
  • 1 pound ground beef
  • 1 pound ground pork
  • 1 teaspoon salt
  • 1/2 teaspoon pepper ground
  • 1 teaspoon worcestershire sauce
  • 1/2 cup fine bread crumbs(i lightly toast 2 slices of bread and put through the food processor
  • 1 - egg

How To Make swedish meatballs ala gramma juju

  • Step 1
    blend all sauce ingredients in a 2 quart saucepan and simmer on low 30 minutes or longer stirring occasionally
  • Step 2
    chop or process celery and onion to a fine mince. add to remaining meatball ingredients and mix well. I pick up the whole wad of meat and slam it back down into the bowl a few times to compact everything and keep my meatballs from falling apart
  • Step 3
    form meatballs to desired size (a 2T ice cream scoop makes short work of it) place on ungreased cookie sheet and bake at 350 degrees till slightly browned 30 to 45 min depending on size
  • Step 4
    remove meatballs with spatula or slotted spoon to crockpot or covered baking dish.
  • Step 5
    toss gently with prepared sauce and bake or crockpot on low at least 30 minutes stirring occasionaly
