Ingredients
- 1/2 cup dried apricots, cut into thin strips
- 1/2 cup celery, finely chopped
- 4 tablespoons butter
- 1/3 cup water
- 2 cups soft bread crumbs
- 6 - center loin pork chops, 1 1/2-inch thick, cut with a pocket
- - salt and pepper, to taste
- 1 1/2 cups applesauce
- 1/2 cup raisins
How To Make stuffed pork chops

Step 1Simmer the apricots, celery, half of the butter, and water in a covered saucepan about 5 minutes or until the celery is tender.

Step 2Toss together with the bread cubes and divide the mixture, stuffing the chops. Use a skewer or toothpicks to keep them closed, and season with salt and pepper.

Step 3Melt 2 tablespoons of butter in an ovenproof skillet and brown the chops on both sides.

Step 4Spoon the applesauce over the chops and sprinkle with the raisins. Cover and bake in a preheated 350F oven for 30 minutes.

Step 5Uncover and continue cooking for another 15 minutes.
