stuffed orange bell peppers

i was gonna make my stuffed reb bells than realized i had no soup........ so i came up with this..... oven is bein preheated as i type!!!!!!

Ingredients

  • 2 large orange bell peppers, 1/2ed lengthwise,seeds and veins removed
  • 1/3 pound ground chuck
  • 1/3 pound pork sausage, mild
  • 1 small red onion,chopped fine
  • 2 tablespoons green bell pepper,chopped fine
  • 4-6 medium button mushroom,rough chop
  • 1/2 medium thin carrot,grated fine
  • 2 large eggs
  • 1/2 bottle honey hickory smoke b'bque sauce
  • 1/2 teaspoon fresh ground black pepper
  • 1/4 pound swiss cheese,fine grated
  • 1 tablespoon fresh parsley,chopped

How To Make stuffed orange bell peppers

  • Step 1
    first in lg pot bring enough water to cover peppers to a boil add bout 1t salt to water once water boils drop each pepper 1/2 into it boil 5 min plunge into bowl of ice water to stop cooking and cool them down set on paper towel upside down to drain
  • Step 2
    now preheat oven to 375 spray a glass bakin dish with cookin spray set aside
  • Step 3
    in lg bowl mix beef,pork,onion,green pepper,mushrooms,carrots mix with hands
  • Step 4
    now take 1/2 the b'bque sauce and put in small bowl add both eggs and pepper mix well then add to meat mix and stir again now add 2/3 of the cheese mix well
  • Step 5
    mix rest of cheese with parsley set aside now take rest of b'bque sauce and add equal amount of warm water to bottle put cap on and shake well
  • Step 6
    put each pepper 1/2 in sprayed dish fill each with meat packin down and moundin on top put cheese/parsley mix on top of each pepper now take 1 whole mushroom and stick in top of meat....pour the rest of b'bque sauce onto pepper and into dish put in oven and bake 30 min then take out of oven and spoon the sauce over the peppers return to oven 15 more min remove from oven let sit 5 min then serve
