I wanted to use up my fresh strawberries, so I did a web search for recipes. I combined, added and changed ingredients from several, and came up with this!

Ingredients

  • 1/3 c
    chicken broth
  • 1/4 c
    balsamic vinegar
  • 1 tsp
    red cooking wine
  • 1/4 c
    red plum jelly
  • 1/8 tsp
    crushed red pepper (more if you like more heat!)
  • 1/4 tsp
    each of rosemary, taragon and oregano
  • 3/4 tsp
    garlic powder
  • 1/2 tsp
    salt
  • 1/4 tsp
    black pepper
  • 4
    pork chops (i used boneless, butterfly cut)
  • ·
    olive oil to cover pan
  • 1 1/2 c
    fresh strawberries, sliced

How to Make Strawberry Pork Chops

Step-by-Step

  1. Whisk together first 5 ingredients and set aside.
  2. Mix rosemary, taragon, oregano, garlic powder, salt and pepper. Rub mixture on both sides of chops.
  3. Heat oil in pan. Brown chops for about 5 minutes on each side. Lower heat to low-medium and add chicken broth mixture. Simmer for about 4 minutes.
  4. Remove chops and keep warm. Add sliced strawberries to pan sauce and simmer for another 5 minutes.
  5. Pour sauce over pork chops and enjoy!
