strawberry pork chops

I wanted to use up my fresh strawberries, so I did a web search for recipes. I combined, added and changed ingredients from several, and came up with this!

Ingredients

  • 1/3 cup chicken broth
  • 1/4 cup balsamic vinegar
  • 1 teaspoon red cooking wine
  • 1/4 cup red plum jelly
  • 1/8 teaspoon crushed red pepper (more if you like more heat!)
  • 1/4 teaspoon each of rosemary, taragon and oregano
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 - pork chops (i used boneless, butterfly cut)
  • - olive oil to cover pan
  • 1 1/2 cups fresh strawberries, sliced

How To Make strawberry pork chops

  • Step 1
    Whisk together first 5 ingredients and set aside.
  • Step 2
    Mix rosemary, taragon, oregano, garlic powder, salt and pepper. Rub mixture on both sides of chops.
  • Step 3
    Heat oil in pan. Brown chops for about 5 minutes on each side. Lower heat to low-medium and add chicken broth mixture. Simmer for about 4 minutes.
  • Step 4
    Remove chops and keep warm. Add sliced strawberries to pan sauce and simmer for another 5 minutes.
  • Step 5
    Pour sauce over pork chops and enjoy!
