My dear friend, Mary Moore, served this to our ladies at Antique Study Club one day. It was SOOOOO good that I refused to leave until she gave me the recipe!

Ingredients

  • 1 pound italian sausage, casings removed, cooked and crumbled
  • 8 ounces ricotta cheese
  • 8 ounces mexican velveeta shredded cheese
  • 10 ounces package frozen spinach, thawed and drained
  • 8 ounces package herb and garlic cream cheese, softened
  • 4 ounces shredded mozzarella cheese
  • 2 - eggs, beaten
  • 1/2 teaspoon hot sauce
  • 2 packages refrigerated pie crusts

How To Make spinach pie

  • Step 1
    Preheat oven to 400 degrees.
  • Step 2
    Mix first six ingredients with the two eggs and hot sauce until well blended.
  • Step 3
    On lightly floured surface roll out pie crust to 12-inch circle and put in pie plate.
  • Step 4
    Fill with sausage mixture.
  • Step 5
    Roll remaining crust and put on top of pie.
  • Step 6
    Brush with egg and bake 35 to 40 minutes.
  • Step 7
    Serve warm or at room temperature.
