Ingredients

  • 6 ounces smoked sausage
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 1 can 14.5 oz diced tomatoes with chiles
  • 3 cups chicken broth
  • 8 ounces pasta
  • 3 cups fresh spinach
  • 1 cup shredded monterrey jack cheese
  • 2 - green onions chopped
  • - salt and pepper to taste

How To Make spinach and sausage pasta

  • Step 1
    Thinly slice the sausage and add it to a large skillet with olive oil. saute over medium heat until nicely browned. Drain off excess fat.
  • Step 2
    Dice the onion and add it to the skillet and saute until onion has softened. Add the tomatoes, and chicken broth. Bring to a boil and add pasta.
  • Step 3
    Put a lid on and turn heat down a bit and simmer for 10 minutes or until pasta is tender stirring and adding water if it becomes to dry.
  • Step 4
    Stir in spinach one cup at a time allowing to wilt. Taste and season with salt and pepper. Sprinkle with cheese and replace lid to let cheese melt. Sprinkle with green onions.
