Ingredients
- 6 ounces smoked sausage
- 1 tablespoon olive oil
- 1 medium onion chopped
- 1 can 14.5 oz diced tomatoes with chiles
- 3 cups chicken broth
- 8 ounces pasta
- 3 cups fresh spinach
- 1 cup shredded monterrey jack cheese
- 2 - green onions chopped
- - salt and pepper to taste
How To Make spinach and sausage pasta

Step 1Thinly slice the sausage and add it to a large skillet with olive oil. saute over medium heat until nicely browned. Drain off excess fat.

Step 2Dice the onion and add it to the skillet and saute until onion has softened. Add the tomatoes, and chicken broth. Bring to a boil and add pasta.

Step 3Put a lid on and turn heat down a bit and simmer for 10 minutes or until pasta is tender stirring and adding water if it becomes to dry.

Step 4Stir in spinach one cup at a time allowing to wilt. Taste and season with salt and pepper. Sprinkle with cheese and replace lid to let cheese melt. Sprinkle with green onions.
