Spinach and Sausage Pasta
6 ozsmoked sausage
1 Tbspolive oil
1 mediumonion chopped
1 can(s)14.5 oz diced tomatoes with chiles
3 cchicken broth
3 cfresh spinach
1 cshredded monterrey jack cheese
2green onions chopped
·salt and pepper to taste
How to Make Spinach and Sausage Pasta
- Thinly slice the sausage and add it to a large skillet with olive oil. saute over medium heat until nicely browned. Drain off excess fat.
- Dice the onion and add it to the skillet and saute until onion has softened. Add the tomatoes, and chicken broth. Bring to a boil and add pasta.
- Put a lid on and turn heat down a bit and simmer for 10 minutes or until pasta is tender stirring and adding water if it becomes to dry.
- Stir in spinach one cup at a time allowing to wilt. Taste and season with salt and pepper. Sprinkle with cheese and replace lid to let cheese melt. Sprinkle with green onions.
