How to Make Spinach and Sausage Pasta
1Thinly slice the sausage and add it to a large skillet with olive oil. saute over medium heat until nicely browned. Drain off excess fat.
2Dice the onion and add it to the skillet and saute until onion has softened. Add the tomatoes, and chicken broth. Bring to a boil and add pasta.
3Put a lid on and turn heat down a bit and simmer for 10 minutes or until pasta is tender stirring and adding water if it becomes to dry.
4Stir in spinach one cup at a time allowing to wilt. Taste and season with salt and pepper. Sprinkle with cheese and replace lid to let cheese melt. Sprinkle with green onions.
