This spinach Feta stuffed pork tenderloin is packed with tons of flavor. Spinach and Feta cheese is mixed with garlic. Once baked, the flavors soak into the pork. Wrapping bacon around the tenderloin adds a wonderful smoky bacon flavor. The fat also soaks into the pork and makes the meat extremely tender. It's beautiful when presented and could be used as an alternate holiday dinner idea.

Ingredients

  • 2 tablespoons olive oil
  • 16 ounces fresh spinach
  • 4 ounces Feta cheese
  • 1 clove garlic, minced
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 12 ounces pork tenderloin
  • 4 slices bacon, peppered if you can find it

How To Make spinach and feta stuffed pork tenderloin

  • Add olive oil to a skillet.
    Step 1
    Preheat oven to 450 degrees F. Add olive oil to a pan over medium heat.
  • Cook the fresh spinach.
    Step 2
    Add spinach and cook for 2 - 3 minutes.
  • Drain excess water from the spinach.
    Step 3
    Drain excess moisture from the cooked spinach.
  • Mix the spinach, Feta, garlic, Worcestershire sauce, salt, and pepper.
    Step 4
    Mix the cooked spinach with Feta cheese, garlic, Worcestershire sauce, salt, and pepper. Set aside.
  • Filet the pork tenderloin.
    Step 5
    Filet the pork tenderloin tenderloin.
  • Spread spinach mixture over the pork.
    Step 6
    Spread the spinach mixture on the tenderloin.
  • Roll up the pork tenderloin and wrap it in bacon.
    Step 7
    Roll up tenderloin to enclose filling. Wrap bacon around the tenderloin.
  • Bake the stuffed pork tenderloin.
    Step 8
    Place in roasting pan. Bake at 450 degrees for 15 minutes. Reduce heat to 400 degrees F and bake until the meat thermometer registers 145 degrees F.
