Ingredients

  • 19 ounces hot italian sausage, cut into pieces
  • 1 large onion, diced (appx 3 cups)
  • 3-4 - garlic cloves, minced
  • 2 cans (10 oz each) rotel tomatoes with green chiles, mild
  • 1 cup heavy cream
  • 4 cups chicken broth, low sodium
  • - salt and pepper
  • 1 pound pasta of choice
  • 2 cups shredded cheese, divided (i used monterey jack)

How To Make spicy sausage pasta

  • Step 1
    In a large OVEN SAFE skillet over medium high heat, saute the italian sausage and onions.
  • Step 2
    Once cooked, add in the garlic and cook until fragrant, about 30 seconds.
  • Step 3
    Add in the broth*, rotel tomatoes (undrained), cream, salt and pepper, and uncooked pasta. Stir well. *I used organic, free range chicken broth (low sodium), and it seemed to be so much more flavorful than just normal chicken broth! Bring to a boil, then reduce heat to medium-low, and cover. Simmer, stirring occasionally, until pasta is tender, 13-15 minutes.
  • Step 4
    Remove from heat and stir in 1 cup of shredded cheese. Sprinkle remaining cup of cheese on top and broil in the oven until cheese is melted, bubbly, and starting to get spotty brown.
