Ingredients
- 19 ounces hot italian sausage, cut into pieces
- 1 large onion, diced (appx 3 cups)
- 3-4 - garlic cloves, minced
- 2 cans (10 oz each) rotel tomatoes with green chiles, mild
- 1 cup heavy cream
- 4 cups chicken broth, low sodium
- - salt and pepper
- 1 pound pasta of choice
- 2 cups shredded cheese, divided (i used monterey jack)
How To Make spicy sausage pasta

Step 1In a large OVEN SAFE skillet over medium high heat, saute the italian sausage and onions.

Step 2Once cooked, add in the garlic and cook until fragrant, about 30 seconds.

Step 3Add in the broth*, rotel tomatoes (undrained), cream, salt and pepper, and uncooked pasta. Stir well. *I used organic, free range chicken broth (low sodium), and it seemed to be so much more flavorful than just normal chicken broth! Bring to a boil, then reduce heat to medium-low, and cover. Simmer, stirring occasionally, until pasta is tender, 13-15 minutes.

Step 4Remove from heat and stir in 1 cup of shredded cheese. Sprinkle remaining cup of cheese on top and broil in the oven until cheese is melted, bubbly, and starting to get spotty brown.
