spicy garlic crunch pork loin

This is the new pork loin recipe I created. It's inspired by Kinder's Spicy Garlic Crunch seasoning, filled with bell peppers (orange and red) sauteed in olive oil and garlic butter. I use crushed almonds for the crunch.

Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon garlic butter
  • 2 medium orange bell peppers, seeded and sliced
  • 2 medium red bell peppers, seeded and sliced
  • 1 medium purple onion, peeled and chopped
  • 6 tablespoons spicy garlic crunch seasoning, divided
  • 8 ounces cream cheese, softened
  • 3/4 cup sour cream
  • 2 tablespoons honey mustard
  • 1/2 cup crushed almonds
  • 4 pounds boneless pork loin

How To Make spicy garlic crunch pork loin

  • Step 1
    Preheat oven to 350 degrees F.
  • Step 2
    Heat olive oil and garlic butter in a large, deep skillet over medium heat. Add orange and red bell peppers and chopped purple onion. Cook and saute for 6 minutes or until the vegetables are tender.
  • Step 3
    Season the sauteed vegetables with 2 tablespoons spicy garlic crunch seasonings. Remove from heat and set aside.
  • Step 4
    In a medium bowl, beat cream cheese, sour cream, honey mustard, 2 tablespoons spicy garlic crunch seasonings, and crushed almonds for 3 minutes until combined.
  • Step 5
    To prepare the pork loin, place it fat side down onto a cutting board. Slice through the pork lengthwise near the bottom, cutting it to about a 1/3 to 1/4-inch thickness.
  • Step 6
    Spread half of the cream cheese mixture. Top with sauteed vegetable mixture. Roll up the pork loin and tightly secure with kitchen twine.
  • Step 7
    Place in a shallow roaster and bake uncovered for 1 hour. Cool completely for 15 minutes.
  • Step 8
    Transfer to a large serving plate. Remove the kitchen twine with kitchen shears. Spread the remaining cream cheese mixture and season the whole pork loin with the remaining spicy garlic crunch seasoning.
