spanish rice & pork chop bake

My sister gave me this recipe many years ago ~ have made it many times, easy and very tasty.

Ingredients

  • 4-6 - pork chops either w/bone or boneless
  • 1 cup white rice
  • 1 medium sized can of tomato sauce or can diced tomato
  • 1 of each medium green, yellow, red peppers
  • 1 medium onion
  • - i use italian seasonings to taste . i also add some shredded cheese of your choice on top of casserole before baking.

How To Make spanish rice & pork chop bake

  • Step 1
    While your cooking your white rice start frying out your diced peppers, onions and either whole or cut up pork chops ~ when meat is browned (not fully cooked) and peppers and onions are softened add your sauce and seasonings ~ let simmer for awhile til all flavors are blended well.
  • Step 2
    After rice is cooked grease a casserole dish or spray with oil and put your rice, meat and sauce in, stir to blend ( I sometimes add a bit of shredded cheese on top )and bake until bubbles around edges, about 15-20 minutes. Serve with a salad or veggie of your choice and some fresh sour dough bread. The flavors blend and makes a tasty dish.
