I think my mom made this with leftover rice. I make my rice fresh, but I have used leftover for it, too. It is a comfort food that I crave now and then.

Ingredients
- 2 cups rice, already cooked. i use minute rice
- 4-5 slices bacon, fried crispy and broken in small pieces
- 1 milliliter onion, chopped
- 1 can tomato sauce or puree
- 1/4-1/2 cup sugar
- 1 pound ground beef, browned and drained (optional)
- - salt and pepper, to taste
How To Make spanish rice

Step 1Cook rice. If use Minute rice, follow directions. Can use leftover rice.

Step 2Fry bacon till crispy and break into small pieces

Step 3Fry chopped onion in bacon grease.

Step 4Add all ingredients to cooked rice. The salt and sugar are to taste. Stir. Can either heat in skillet on stove top or heat in microwave.

Step 5This can be made as a side if you don't use the hamburger in it.
