I think my mom made this with leftover rice. I make my rice fresh, but I have used leftover for it, too.
It is a comfort food that I crave now and then.

2 c
rice, already cooked. i use minute rice
4-5 slice
bacon, fried crispy and broken in small pieces
1 ml
onion, chopped
1 can(s)
tomato sauce or puree
1/4-1/2 c
1 lb
ground beef, browned and drained (optional)
salt and pepper, to taste

How to Make Spanish Rice


  • 1Cook rice. If use Minute rice, follow directions. Can use leftover rice.
  • 2Fry bacon till crispy and break into small pieces
  • 3Fry chopped onion in bacon grease.
  • 4Add all ingredients to cooked rice. The salt and sugar are to taste. Stir. Can either heat in skillet on stove top or heat in microwave.
  • 5This can be made as a side if you don't use the hamburger in it.
