This dish is packed with flavor!! It can be made low calorie by using Margarine and artificial sweetener or hotter by adding more Ancho Chili. I cooked this in a wok! Whatever your heart desires!

Ingredients
- 2 pounds boneless pork loin fat removed and cubed
- 1 tablespoon butter
- 1 large onion diced
- 1 ancho chili in adobo sauce seeded and chopped
- 1 cup bell pepper diced ( any color )
- 1 cup celery diced
- 16 ounces can diced fire roasted tomatoes
- 1 tablespoon minced garlic
- 1/2 teaspoon chili powder
- 3/4 cup water
- salt and pepper to taste
- 2 tablespoons sugar
- cornstarch ( optional )
How To Make spanish pork

Step 1Melt butter in a large fry pan and brown the pork

Step 2Push pork to one side, add onion and garlic Saute' until tender

Step 3Mix onion and pork together

Step 4Add the can of tomatoes, water, celery, bell pepper, ancho chili, salt and pepper

Step 5Stir, cover and simmer 45 minutes or until pork is tender

Step 6Before serving stir in 2 Tbls sugar or more to taste

Step 7Thicken with Cornstarch to your liking

Step 8Serve over rice
