- 4 - potatoes
- 1 pound tomatoes
- 1 - green bell pepper
- 2 tablespoons vinegar
- 1 pound pork shoulder butt
- 3 - garlic cloves, crushed
- 1 cup stock
- 1 - bay leaf
- 1 - chopped onion
How To Make spanish pork stew with potatoes

Step 1Cut pork into large chunks.

Step 2Coarsely chop tomatoes.

Step 3Peel potatoes and cut into thick chunks.

Step 4Seed, core, and thinly slice bell pepper.

Step 5Brown pork in 2 tablespoons oil if desired.

Step 6Layer ingredients in crockpot in order; cook until meat is tender, about 10 hours.

Step 7Stovetop preparation: Heat oil in dutch oven over medium heat.

Step 8Add pork and saute a few minutes, until lightly browned.

Step 9Add garlic and saute well.

Step 10Add onion and saute until tender.

Step 11Add tomatoes and cook 5 minutes.

Step 12Add water, vinegar and bay leaf.

Step 15Cover and simmer until pork is almost tender, about 40 minutes.
