This is a Francis family favorite...from a handed down recipe of Mam-maw Francis. This recipe was given to me by Debbie Francis Shelley several years ago when I did my first Drocheat Museum cookbook.

  • 1
    large onion, chopped
  • 1 can(s)
    cream of mushroom soup
  • 2 c
  • 2 c
    grated spam or ham
  • 1/4 c
    grated cheddar cheese

  • 1 c
  • 1 tsp
    baking powder
  • 1/4 tsp
  • 1/4 c
    lard or shortening
  • 1
    egg yolk
  • 1 1/2 Tbsp
  • 1 tsp
    lemon juice
  • 1/4 c
    grated cheddar cheese

How to Make Spam Pie


  1. For Pie Filling: Chop one large onion. Cook covered in samll amount of water (just enought to cover onion mixture) until onion is clear colored.
  2. Combine one can of mushroom soup with two cups of water to onion mixture, mix well and remove from heat.
  3. Add to this mixture Spam or ham and 1/4 cup of grated cheese. Pour mixture in to casserole dish and cover with crust. And top with cheese. (Crust directions to follow)
  4. Crust: Fold, cut and mix all ingredients together like you would any pie crust. Roll out and cut into strips and lay on top of filling for the crust. Bake at 350 degrees until bubbly and brown. If you are rushed for time, a ready made crust will do with cheese sprinkled on top.
