I made this up when our children were small, as a way to get a few more vegetables into them. They loved it! It is a marriage of a comfort favorite, macaroni and cheese, with green peas and some added protein with the meat. Although we always called it "Spam"-a-roni, you can use any leftover meat for this recipe. I have used our leftover Easter ham in these photos.

Ingredients

  • 8 ounces macaroni, uncooked
  • 1 cup frozen peas
  • 2 cups chopped spam
  • 1 package (8 oz) velveeta cheese shreds
  • 1 small can (5.3 oz) evaporated milk
  • 1/2 cup shredded mozzarella or parmesan cheese (optional)

How To Make spam-a-roni!

  • Step 1
    First, cook macaroni. Bring 2 quarts salted water to a boil and stir in macaroni. Cook 10 minutes.
  • Step 2
    While pasta is cooking, place Velveeta cheese and evaporated milk in a microwave-safe 2-quart serving dish. Heat on high power 1 minute at a time, stirring until cheese melts and blends completely. It takes about 3 minutes.
  • Step 3
    Back to the pasta: After 10 minutes, add the peas and chopped spam to the macaroni and bring back to a boil. Continue to cook about 3 minutes, until macaroni is done to your liking. Drain well.
  • Step 4
    Stir macaroni into the cheese sauce, blending well. If desired, top with additional grated cheese and cover dish so cheese melts.
