spam-a-roni!
I made this up when our children were small, as a way to get a few more vegetables into them. They loved it! It is a marriage of a comfort favorite, macaroni and cheese, with green peas and some added protein with the meat. Although we always called it "Spam"-a-roni, you can use any leftover meat for this recipe. I have used our leftover Easter ham in these photos.

Ingredients
- 8 ounces macaroni, uncooked
- 1 cup frozen peas
- 2 cups chopped spam
- 1 package (8 oz) velveeta cheese shreds
- 1 small can (5.3 oz) evaporated milk
- 1/2 cup shredded mozzarella or parmesan cheese (optional)
How To Make spam-a-roni!

Step 1First, cook macaroni. Bring 2 quarts salted water to a boil and stir in macaroni. Cook 10 minutes.

Step 2While pasta is cooking, place Velveeta cheese and evaporated milk in a microwave-safe 2-quart serving dish. Heat on high power 1 minute at a time, stirring until cheese melts and blends completely. It takes about 3 minutes.

Step 3Back to the pasta: After 10 minutes, add the peas and chopped spam to the macaroni and bring back to a boil. Continue to cook about 3 minutes, until macaroni is done to your liking. Drain well.

Step 4Stir macaroni into the cheese sauce, blending well. If desired, top with additional grated cheese and cover dish so cheese melts.
