spaghetti one dish supper by microwave

I had to feed my family of 4 without a stove. We moved into a rental that was supposed to have a stove. It was electric and the first time I touched it I got shocked! With 2 little ones the stove had to be unplugged! NO gas connections either. We had a Coleman camp stove but had to drive 20 miles 1 way just to get more fuel for it. Food that would cook in a microwave was our meal fare till we could find another electric stove. Hubby was picky. The 3 year old loved spaghetti and the 1 year old was just learning to eat family food so it was a challenge to find foods that would satisfy everyone.

Ingredients

  • 1 pound lean ground beef (or turkey or pork)
  • 4 cups tomato juice
  • 1-1 1/2 teaspoons italian seasoning (or oregano & basil)
  • 1 tablespoon onion flakes, dehydrated
  • 1/2-1 teaspoon garlic powder
  • - spaghetti (4 servings), broken into 4 inch pieces
  • - salt and pepper, to taste

How To Make spaghetti one dish supper by microwave

  • Step 1
    Put ground meat in a microwave safe 2 quart bowl. Heat and stir to break up meat into small pieces. Should take around 4 minutes.
  • Step 2
    When meat is no longer pink. Add tomato juice and seasonings. Heat to very hot - almost boiling. WATCH the tomato juice will boil over very easily.
  • Step 3
    Add spaghetti that is broken into about 3 - 4 inch pieces. This length makes it easier to stir.
  • Step 4
    Cook on high and stir about every minute so nothing gets clumpy. Cook till spaghetti is al-dente. NOTE: Total cooking time is approximate. Since this recipe was done in the 1970s microwaves have changed a lot!
  • Step 5
    Serve with grated Parmesan and/or Romano Cheese.
  • Step 6
    NOTE: The grocery store where we shopped would blend the ground meat to your desires.
