south west stuffed red bell peppers

My family and I are not bell pepper eaters, but I always tell my daughters to try things you don't like cooked/prepared differently you may be suprised, and we were all suprised when I took a southwest twisted to stuffed peppers. This has become a family favorite. I used a taco flavored rice pack instead of white rice and it just seemed to work, but you can use anyflavor or kind you wish.

Ingredients

  • 4 - red bell peppers
  • 1 pound ground pork
  • 1 can rinsed black beans
  • 1/2 can corn
  • 1 can tomatoes, fire roasted
  • 2 tablespoons tomatoe paste
  • - salt and pepper
  • - garlic powder
  • 1 1/2 teaspoons taco seasoning mix
  • 2 - cups cooked rice
  • 1 - cup shredded cheese (4 cheeseblend)
  • 1 medium onion chiped

How To Make south west stuffed red bell peppers

  • Step 1
    Pre-heat oven to 350.
  • Step 2
    In large skillet, brown ground pork, add seasonings (to taste). Add chopped onion. Drain meat if needed. Add tomatoes,tomatoe paste, black beans, corn, cooked rice, cheese.
  • Step 3
    wash and cut peppers in half, stuff peppers with meat mixture, pack in filling. Place stuffed peppers in oven for about 20-25 covered then remove foil and bake another 10 mins. Peppers are finished when teneder.
