south west stuffed red bell peppers

My family and I are not bell pepper eaters, but I always tell my daughters to try things you don't like cooked/prepared differently you may be suprised, and we were all suprised when I took a southwest twisted to stuffed peppers. This has become a family favorite. I used a taco flavored rice pack instead of white rice and it just seemed to work, but you can use anyflavor or kind you wish.

Ingredients
- 4 - red bell peppers
- 1 pound ground pork
- 1 can rinsed black beans
- 1/2 can corn
- 1 can tomatoes, fire roasted
- 2 tablespoons tomatoe paste
- - salt and pepper
- - garlic powder
- 1 1/2 teaspoons taco seasoning mix
- 2 - cups cooked rice
- 1 - cup shredded cheese (4 cheeseblend)
- 1 medium onion chiped
How To Make south west stuffed red bell peppers

Step 1Pre-heat oven to 350.

Step 2In large skillet, brown ground pork, add seasonings (to taste). Add chopped onion. Drain meat if needed. Add tomatoes,tomatoe paste, black beans, corn, cooked rice, cheese.

Step 3wash and cut peppers in half, stuff peppers with meat mixture, pack in filling. Place stuffed peppers in oven for about 20-25 covered then remove foil and bake another 10 mins. Peppers are finished when teneder.
