- 4 - 1 1/2 - 2 " thick boneless chops
- - salt & pepper
- 2 tablespoons vegt. oil
- 1 1/2-2 cups vadalia onion--separate into rings
- 1 cup beef stock
- 1 tablespoon chopped fresh parsley
- 1 teaspoon yellow mustard
- 1 teaspoon paprika
- 1 - (8 oz) sour cream
- - hot cooked rice (optional)

Step 1IN LARGE SKILLET, HEAT OIL OVER MED. HIGH HEAT. ADD CHOPS, COOK UNTIL BROWN ON BOTH SIDES. PUT ONION RINGS EVENLY OVER CHOPS.

Step 2IN SMALL BOWL, COMBINE STOCK, PARSLEY, MUSTARD, & PAPRIKA & SEASON WITH SALT & PEPPER. POUR BROTH MIXTURE OVER CHOPS. RETURN THE MIXTURE TO A BOIL. REDUCE HEAT TO MED. HIGH & SIMMER 30 MINS, STIRRING OCCASIONALLY.

Step 3STIR IN SOUR CREAM UNTIL BLENDED & COOK UNTIL HEATED THROUGH. THIS CAN BE SERVED OVER HOT COOKED RICE IF DESIRED
