When I found out that I was going to Las Vegas for the World's Food Championship to cook my chili I was super excited. I did find out that there would have to be some changes and so I set out to Perfect something that was damn near perfect to begin with...And, so it was born, Son of (H)Eat it Up Chili!

Ingredients

  • 1 pound ground beef, 94% lean
  • 1 pound ground sausage
  • 2 tablespoons vegetable oil
  • 1 large white onion, minced
  • 1 - green bell pepper, seeded and chopped
  • 3 - jalapeno peppers, seeded, minced
  • 1 - habanero pepper, fresh, seeded, minced
  • 6 cloves garlic, minced
  • 1 bunch chives, finely minced
  • 2 cans kidney beans, drained and rinsed (14.5oz)
  • 1 can diced tomatoes (14.5)
  • 1 can tomato sauce (8oz)
  • 1 can tomato paste
  • 14 1/2 ounces beef broth
  • 3/4 cup chili powder
  • 1 tablespoon cumin (ground)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper
  • 1 tablespoon salt
  • 1 tablespoon white pepper
  • 1 tablespoon fresh ground cinnamon
  • 1 teaspoon anise seed

How To Make son of (h)eat it up chili

  • Step 1
    Cook beef and pork until brown and crumbly and no longer pink. Drain and discard any grease.
  • Step 2
    In a large pot heat olive oil over medium heat. Stir in onion, bell pepper, habanero, jalapeno, and garlic. Cook for about 5 minutes, until the onion is soft.
  • Step 3
    Stir meat back in and add chives, beans, tomatoes, tomato paste, tomato sauce, and broth. Add additional broth until desired consistency is reached.
  • Step 4
    Sprinkle with spices and seasonings.
  • Step 5
    Bring to a boil over medium heat then reduce to low and simmer for 2 hours. Stirring occasionally. Remove from heat and allow to rest for 20 minutes.
