Ingredients
- 1 pork tenderloin cut into medallions
- salt and pepper
- 1/3 cup flour
- 1/3 cup vegetable oil
- 1 large yellow onion sliced
- 4 cloves garlic minced
- 1 cup chicken stock
- 1 cup water
- 2 tablespoons worcestershire sauce
- 1 tablespoon vinegar
- 1 teaspoon dijon mustard
- fresh parsley for garnish
How To Make smothered pork tenderloin

Step 1Rinse the pork medallions and pat dry and season with salt and pepper. Dredge lightly in the flour. Heat the oil in a skillet and brown the pork on both sides. Remove from the pan and set aside.

Step 2Place the onions in the pan and begin browning them. Then add the garlic and flour. Cook about 7 minutes.

Step 3In a bowl combine the water chicken stock, Worcestershire, vinegar, and mustard. Pour over the onions and bring to a boil. Reduce to a simmer and add the pork back into the pan. Cover and simmer until the pork is very tender about 30 minutes

Step 4Garnish with parsley
