Ingredients

  • 4
    pork chops 3/4 inch thick, bone-in
  • 2/3 c
    flour
  • 1 Tbsp
    garlic powder
  • 1 Tbsp
    onion powder
  • 1/2 tsp
    salt
  • 1/4 tsp
    cayenne pepper
  • 1/4 tsp
    pepper
  • 1/4 c
    olive oil
  • 1 c
    chicken broth
  • 1/2 c
    buttermilk
  • ·
    fresh flat leaf parsley chopped, for garnish

How to Make Smothered Pork Chops

Step-by-Step

  1. Pat the pork chops dry with paper towels Mix all the dry ingredients in a shallow dish.
  2. Coat the pork chops with the flour mixture.
  3. Heat oil over medium high heat in large saute pan.
  4. Add pork chops to hot oil and fry 3 minutes on each side until golden brown. Remove from pan.
  5. Add 2 T seasoned flour to pan. Mix up flour and fat. Mix in chicken broth and let it reduce and thicken for 5 minutes.
  6. Add buttermilk to pan. Return pork chops to pan covering with sauce.
  7. Simmer for 5 minutes or until pork is cooked through.
  8. Season with salt and pepper. Serve pork chop with gravy and chopped parsley.
