This is a newly created recipe, the meat was so tender. The combination of the pepper, onion gravy and broiled grape tomatoes served over mashed potatoes, such a flavorful combination.

Ingredients
- 6 - 8 - center cut pork chops
- 1 can low sodium beef broth
- 1 large green pepper, thinly sliced
- 1 large onion thinly sliced
- 1 pint grape tomatoes
- - mashed potatoes
- - creole seasoning, salt and pepper
- 4 tablespoons corn starch to thicken broth
- 2 cloves garlic, minced
How To Make smothered center cut pork chops

Step 1Salt and pepper the pork chops. Brown them in a skillet.

Step 2Add the peppers, garlic and onions over the chops. Add the beef broth. Simmer for 30 minutes.

Step 3Toss the grape tomatoes in olive oil lightly. Salt and pepper. Bake at 350 degrees for 30 minutes.

Step 4Add a small amount of water to the corn starch to make a paste and pour into the pork chop pan to thicken the broth and make gravy. Continue simmering while the tomatoes are cooking.

Step 5To serve, Place a small mound of potatoes int he center of a plate, Slice a pork chop thin and surround the potatoes with the chop. Next smother with the gravy and place the cooked tomatoes around it. Lightly sprinkle the cajun seasoning over the dish before serving.
