I found this recipe online a while ago and it was an instant hit with my Latin familia!If you enjoy Cuban food done the easy way, this is a good recipe to have.

Ingredients

  • 4 - cubanelle peppers, seeded and sliced
  • 2 cups sliced onions
  • 1 can (8 oz) tomato sauce
  • 1/2 cup tomato paste
  • 2 tablespoons each olive oil, cider vinegar, and minced garlic
  • 2 teaspoons ground cumin
  • 2 - bay leaf
  • 1 teaspoon salt
  • 2 - boneless chuck steaks (3 lbs)
  • 2/3 cup coarsely chopped alcaparado (i use goya) or 2/3 cup pimiento-stuffed olives plus 2 tbsp chopped capers
  • 2/3 cup chopped cilantro

How To Make slow cooker cuban ropa vieja

  • Step 1
    Mix all ingredients except steak, alcaparrado and cilantro in a 3 1/2 quarter or larger slow-cooker.
  • Step 2
    Top with steak; turn steak over to coat with mixture.
  • Step 3
    Cover and cook on LOW 8-10 hours until steak is very tender.
  • Step 4
    Transfer steak to cutting board.
  • Step 5
    Remove and discard bay leaf. Tear steak in shreds using two forks. Return shreds to cooker; stir in alcaparrado and chopped cilantro and serve.
