scalloped potatoes & pork chops

I used to make only scalloped potatoes and ham but one day I asked myself what would happen if I used pork chops instead of ham. The results were amazingly good, so now I alternate between the two.

Ingredients

  • 6-8 large potatoes
  • 1 tablespoon oil
  • 1/2 cup all purpose flour
  • 4 - boneless pork chops
  • 3 tablespoons butter
  • 2 tablespoons all purpose flour
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 1/2 cups milk
  • 1 tablespoon minced onion

How To Make scalloped potatoes & pork chops

  • Step 1
    Pare potatoes and slice thin; coat pork chops with small amount of flour and brown on both sides in oil in a large skillet.
  • Step 2
    In a medium saucepan, melt butter; add flour, salt and pepper, and minced onion. Mix with melted butter till thickened. Slowly add the milk, stirring constantly. Keep stirring until it starts to thicken.
  • Step 3
    Place potatoes in Dutch oven or large baking dish. Pour half of white sauce over them. Place pork chops on top. Cover with remaining white sauce.
  • Step 4
    Bake, covered, in a 350-degree oven for 1 hour. Remove lid and bake another 30 minutes.
  • Step 5
    You may also add 4 to 8 ounces of cheddar cheese to the white sauce while it is hot.
