Ingredients
- 4 - pork rib chops, each about 1 1/2-inches thick
- 4 teaspoons cajun seasoning
- 1 teaspoon freshly ground pepper
- CARAMELIZED ONIONS:
- 4 cups chopped sweet onions
- 2 tablespoons olive oil
- 1 tablespoon brown sugar
- 2 tablespoons balsamic vinegar
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon pepper

Step 1Sprinkle pork chops evenly with Cajun seasoning and pepper.

Step 2Grill, covered with grill lid, over medium high heat (350°F to 400°F) 8 minutes on each side.

Step 3Serve with Caramelized Onions.

Step 4CARAMELIZED ONIONS: Cook onion in hot olive oil in a large skillet over medium-high heat, stirring often, 10 to 12 minutes or until golden. Sprinkle with sugar, and cook 2 minutes. Add vinegar and next 3 ingredients, and cook 2 minutes. Serve warm or cold.
