My mother used to make this simple, quick and cheap meal! She sadly is now in a care home, but the 'recipe' goes on This recipe is equally suited to tinned baked beans to replace tinned tomatoes

Ingredients

  • 2 packages pork sausages (cooked and cut into chunks)
  • 2 cans chopped tomatoes in juice
  • 1 - onion (chopped & cooked)
  • 500 grams potatos (par boiled and sliced into thin slices)

How To Make sausage hotpot (like my mother used to do)

  • Step 1
    Place a layer of cooked sausages in bottom of an oven proof dish (lasagne dish or casserole dish are fine) (Using about half the sausages)
  • Step 2
    Next sprinkle over the cooked onion (Using about half the onion)
  • Step 3
    Now spoon over 1 tin of tomatoes
  • Step 4
    Next layer the par boiled potatoes to cover the whole mixture
  • Step 5
    Now repeat steps ending with the potato mixture
  • Step 6
    Now place in pre - heated oven (180 c) and cook for about 1 to 1 and 1/4 hours or until golden brown
  • Step 7
    Serve with warm fresh bread and butter
