My mother used to make this simple, quick and cheap meal! She sadly is now in a care home, but the 'recipe' goes on This recipe is equally suited to tinned baked beans to replace tinned tomatoes

Ingredients
- 2 packages pork sausages (cooked and cut into chunks)
- 2 cans chopped tomatoes in juice
- 1 - onion (chopped & cooked)
- 500 grams potatos (par boiled and sliced into thin slices)
How To Make sausage hotpot (like my mother used to do)

Step 1Place a layer of cooked sausages in bottom of an oven proof dish (lasagne dish or casserole dish are fine) (Using about half the sausages)

Step 2Next sprinkle over the cooked onion (Using about half the onion)

Step 3Now spoon over 1 tin of tomatoes

Step 4Next layer the par boiled potatoes to cover the whole mixture

Step 5Now repeat steps ending with the potato mixture

Step 6Now place in pre - heated oven (180 c) and cook for about 1 to 1 and 1/4 hours or until golden brown

Step 7Serve with warm fresh bread and butter
