Ingredients
- EGGS
- 3 tablespoons butter
- 8 large eggs
- salt and pepper
- HASH BROWNS
- 3 tablespoons vegetable oil
- 16 ounces frozen hashbrowns
- salt and pepper
- SAUSAGE GRAVY
- 3 tablespoons vegetable oil
- 1 pound ground sausage
- 1 medium onion diced
- 3 tablespoons flour
- 3 1/2 cups milk
- salt and pepper
- ENCHILADAS
- 12 fajita flour tortillas
- 3 cups sharp white cheddar cheese shredded
How To Make sausage gravy enchiladas

Step 1For the eggs Add the butter to a skillet. Scramble the eggs with salt and pepper and cook until fluffy. Set aside.

Step 2For the hashbrowns Add the vegetable oil to a large skillet. Cook the hashbrowns until golden on each side. Season with salt and pepper. Set aside.

Step 3For the sausage gravy Add the oil to a skillet. Cook the sausage with the onions until no longer pink. Remove 1/2 the sausage to a plate. Stir in the flour then slowly add the milk and cook until creamy and thickened. Season with salt and pepper. Set aside.

Step 4Preheat oven 350 degrees. Spray a baking dish with cooking spray. Layer the eggs, hash brown, sausage and cheese into each tortilla. Roll up and tuck in edges. Lay side by side in baking dish.

Step 5When all tortillas are used up pour the sausage gravy over top them and sprinkle the remaining cheese. Bake for 30 to 40 minutes.
