Ingredients

  • EGGS
  • 3 tablespoons butter
  • 8 large eggs
  • salt and pepper
  • HASH BROWNS
  • 3 tablespoons vegetable oil
  • 16 ounces frozen hashbrowns
  • salt and pepper
  • SAUSAGE GRAVY
  • 3 tablespoons vegetable oil
  • 1 pound ground sausage
  • 1 medium onion diced
  • 3 tablespoons flour
  • 3 1/2 cups milk
  • salt and pepper
  • ENCHILADAS
  • 12 fajita flour tortillas
  • 3 cups sharp white cheddar cheese shredded

How To Make sausage gravy enchiladas

  • Step 1
    For the eggs Add the butter to a skillet. Scramble the eggs with salt and pepper and cook until fluffy. Set aside.
  • Step 2
    For the hashbrowns Add the vegetable oil to a large skillet. Cook the hashbrowns until golden on each side. Season with salt and pepper. Set aside.
  • Step 3
    For the sausage gravy Add the oil to a skillet. Cook the sausage with the onions until no longer pink. Remove 1/2 the sausage to a plate. Stir in the flour then slowly add the milk and cook until creamy and thickened. Season with salt and pepper. Set aside.
  • Step 4
    Preheat oven 350 degrees. Spray a baking dish with cooking spray. Layer the eggs, hash brown, sausage and cheese into each tortilla. Roll up and tuck in edges. Lay side by side in baking dish.
  • Step 5
    When all tortillas are used up pour the sausage gravy over top them and sprinkle the remaining cheese. Bake for 30 to 40 minutes.
