This is a modified "Atkins Diet" recipe. It's low-carb and delicious!!! My hubby loves it, especially drenched with salsa, so I let him have most of the sauce and put extra cream cheese on mine. I use the already prepared cream cheese w/chives from the grocery store.

Ingredients For salsa pork chops

    thick cut pork chops
  • olive oil
  • 1 c
    your favorite salsa
  • spreadable cream cheese w/chives

How To Make salsa pork chops

    Heat oil in a medium skillet. Brown chops on both sides.
  • 2
    Cover the chops with the salsa. My husband likes a lot of salsa but you can use less if you like.

    Lower heat and cook (covered) until chops reach about 160 degrees.

    Top each chop with about a tablespoon of the cream cheese w/chives.

    Continue to cook until topping is softened, about another 5 minutes.
