Roger's Lasagna

Ingredients

1 1/2 lbitalian sausage, mild

1 boxbarilla no cook lasagna noodles

2 bottletomato basil spaghetti sauce (use a high quality sauce)

1 smallsweet onion, chopped

1 can(s)2 oz of sliced black olives

1 can(s)fire roasted chopped tomatoes

16 ozricotta cheese
-
1 largeegg
-
1/2 cparmesan cheese, grated

1/2 cmozzarella cheese, shredded

·salt and pepper
-
1 lbmozzarella, shredded
-
1 lbextra sharp cheddar cheese, shredded
How to Make Roger's Lasagna
- Preheat oven to 350*. Grease lasagna pan or 9x13 pan.
- Brown sausage in a skillet. drain. set aside.
- In a bowl mix together the ricotta cheese, egg, parmesan cheese, and the 1/2 cup mozzarella cheese.
- Start layering, starting with noodles, ricotta mixture,sausage, onion, olives, tomatoes, sauce, then a combination of the sharp cheddar and the mozzarella cheese. Repeat layers until ingredients are all used (usually 3 good layers). You want to save some cheese to put on top.
- Bake for about 45 minutes or so until bubbly and the noodles are cooked through.
- NOTE: I always grate my own cheese, it melts better and there is a taste difference.
