rob's down south chili

This recipe will make a mess of chili and real good eats. I've added different ingredients over the years and finally got the right taste.

Ingredients

  • 1 pound ground pork with sage
  • 1 pound ground beef chuck
  • 1 pound red chili beans
  • 1 (15 oz) can rotel
  • 1 (15 oz) can whole stewed tomatoes
  • 2 (15 oz) cans tomato sauce
  • 1 can beer
  • 1 large bell pepper -- seeded and diced
  • 1 medium onion -- diced
  • 2 medium jalapenos -- diced
  • 1/2 clove garlic -- chopped
  • 1 teaspoon cumin
  • 1 tablespoon brown sugar
  • 1 tablespoon fresh cilantro -- chopped
  • 2 packages hormel original chili seasoning

How To Make rob's down south chili

  • Step 1
    Prepare your beans in the crock pot; add the beer and enough water to cover beans.
  • Step 2
    After the beans are done. Add them to a large stock pot. You may need to drain most of the bean juice off. Save some of the juices back for later. You may need to add it back to the chili for consistency.
  • Step 3
    In a large skillet brown the onion, bell & jalapeño peppers, cilantro, garlic, pork, and beef.
  • Step 4
    After browned add to the stock pot.
  • Step 5
    Then add the Tomato Sauce, Rotel, Tomatoes, Red Beans, cumin, brown sugar, and Hormel Chili Seasoning.
  • Step 6
    Let it simmer for 30 minutes.
