This recipe will make a mess of chili and real good eats. I've added different ingredients over the years and finally got the right taste.

Ingredients

  • 1 lb
    ground pork with sage
  • 1 lb
    ground beef chuck
  • 1 lb
    red chili beans
  • 1 (15 oz) can(s)
    rotel
  • 1 (15 oz) can(s)
    whole stewed tomatoes
  • 2 (15 oz) can(s)
    tomato sauce
  • 1 can(s)
    beer
  • 1 large
    bell pepper -- seeded and diced
  • 1 medium
    onion -- diced
  • 2 medium
    jalapenos -- diced
  • 1/2 clove
    garlic -- chopped
  • 1 tsp
    cumin
  • 1 Tbsp
    brown sugar
  • 1 Tbsp
    fresh cilantro -- chopped
  • 2 pkg
    hormel original chili seasoning

How to Make Rob's Down South Chili

Step-by-Step

  1. Prepare your beans in the crock pot; add the beer and enough water to cover beans.
  2. After the beans are done. Add them to a large stock pot. You may need to drain most of the bean juice off. Save some of the juices back for later. You may need to add it back to the chili for consistency.
  3. In a large skillet brown the onion, bell & jalapeño peppers, cilantro, garlic, pork, and beef.
  4. After browned add to the stock pot.
  5. Then add the Tomato Sauce, Rotel, Tomatoes, Red Beans, cumin, brown sugar, and Hormel Chili Seasoning.
  6. Let it simmer for 30 minutes.
