Ingredients
- 2 pounds pork belly
- 1 tablespoon kosher salt
- 2 teaspoons thyme
- 1 teaspoon sage
- - olive oil
- HOISIN MUSHROOM SAUCE
- 1 medium onion diced
- 3 cloves garlic minced
- 1 cup shiitake mushrooms sliced
- 3 tablespoons hoisin sauce
- 2 tablespoons saki or sherry
- 1 cup chicken stock
- 1 teaspoon cornstarch mixed with 1 tbsp water

How To Make roasted pork belly with hoisin mushroom sauce

Step 1Mix the thyme, salt and sage together. Lay the pork belly out flat. Rub the spice mixture over each side and drizzle with olive oil rubbing the mixture all over the pork belly.

Step 2Preheat oven 450 degrees. Place foil on a baking sheet and set a rack on the baking sheet. Roll the pork belly and secure with butchers twine. Place on rack. Roast for 1 and 1/2 hours.

Step 3Meanwhile make the sauce. Add oil to a large skillet. Saute the onions, and mushrooms until translucent and browned. Mix the Hoisin, saki, and chicken stock. Pour into a sauce pan and cook over medium high heat until reduced by half. Stir the cornstarch and water together and whisk into the Hoisin mixture. Once the sauce is thickened removed from heat. Serve the mushroom hoisin mixture over the pork belly
