Ingredients
- 5 pounds pork shoulder roast
- RUB
- 2 teaspoons salt
- 1/4 cup chopped onion
- 7 cloves whole garlic
- 2 tablespoons fresh oregano leaves
- 1 tablespoon fresh parsley
- 1 teaspoon cumin
- 1 tablespoon smoked paprika
- 1 package sazon goya
- 1 teaspoon black pepper
- TO ROAST
- 1 medium onion sliced
- 1 orange sliced
- 1/2 cup each orange juice and chicken stock
How To Make roasted herb spiced pork

Step 1In a food procressor add the onion, garlic, oregano and parsley. Process adding olive oil to make a paste. Scap into a bowl and add the remaining rub ingredients. Mix well.

Step 2Take the pork out of package and score it all over with a knife. Rub the rub all over the roast. Wrap in plastic wrap and place in fridge for 4 hours up to 3 days.

Step 3To roast Preheat oven 275 degrees. Add a layer of onions and orange at the bottom of roasting pan. Pour in the stock and orange juice. Place the pork with the marinade into the pan.

Step 4Remove the rub from the top of the roast. Roast the pork for about 3 hours or more until very tender. Let the roast rest for 15 minutes .

Step 5drain the drippings through a fine mesh strainer. Place in a saucepan and cook until reduced and thickened a bit.

Step 6Serve the roast with the sauce.
