Ingredients
- 1 medium pork cut
- 1 cup olive oil, extra virgin
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon szechuan five spice
- 1/2 slice onion
- 1 - tomato
- 1/2 ounce caribbean jerk marinade
How To Make roast pork with tomatoes and onion

Step 1First take a slab of pork and cut a cross cross pattern over the fat so the marinade can sink in.

Step 2Next pour olive oil over the top and add a teaspoon of minced garlic, a teaspoon of salt and pepper, and a teaspoon of Szechwan five spice.

Step 3Add a half onion (sliced), and hand crush your tomato so that all the juice comes out.

Step 4Place aluminum foil over the top, then place the meat into the refrigerator, and allow to marinate for 1 hours.

Step 5After marinating, inject Caribbean Jerk marinade into the pork.

Step 6Place into a 350 degree oven for 1 hour and 40 minutes.
