How to Make Roast Pork with Tomatoes and Onion

  1. First take a slab of pork and cut a cross cross pattern over the fat so the marinade can sink in.
  2. Next pour olive oil over the top and add a teaspoon of minced garlic, a teaspoon of salt and pepper, and a teaspoon of Szechwan five spice.
  3. Add a half onion (sliced), and hand crush your tomato so that all the juice comes out.
  4. Place aluminum foil over the top, then place the meat into the refrigerator, and allow to marinate for 1 hours.
  5. After marinating, inject Caribbean Jerk marinade into the pork.
  6. Place into a 350 degree oven for 1 hour and 40 minutes.
