Ingredients

  • 3 pounds boneless pork roast,rind on tied by the butcher
  • 1 cup dry sherry
  • 1/4 cup maple syrup
  • 1 pint cherry tomatoes

How To Make roast pork with cherry tomatoes

  • Step 1
    Preheat the oven to 400F. Place the pork in a roasting pan and score the skin. Pour the sherry and maple syrup over the pork and season the skin generously with sea salt.
  • Step 2
    Roast for 20 minutes, the reduce the heat to 325F and roast for 1 hour. In the last 20 minutes or roasting, add the tomatoes.
  • Step 3
    Let the pork rest for 10-15 minutes, then slice and serve with the tomatoes and pan juices. Optional: Delicious served with creamy mashed potatoes.
