Ingredients
- 3 pounds boneless pork roast,rind on tied by the butcher
- 1 cup dry sherry
- 1/4 cup maple syrup
- 1 pint cherry tomatoes
How To Make roast pork with cherry tomatoes

Step 1Preheat the oven to 400F. Place the pork in a roasting pan and score the skin. Pour the sherry and maple syrup over the pork and season the skin generously with sea salt.

Step 2Roast for 20 minutes, the reduce the heat to 325F and roast for 1 hour. In the last 20 minutes or roasting, add the tomatoes.

Step 3Let the pork rest for 10-15 minutes, then slice and serve with the tomatoes and pan juices. Optional: Delicious served with creamy mashed potatoes.
