How to Make Roast Pork with Cherry Tomatoes
- 1Preheat the oven to 400F.
Place the pork in a roasting pan and score the skin.
Pour the sherry and maple syrup over the pork and season the skin generously with sea salt.
- 2Roast for 20 minutes, the reduce the heat to 325F and roast for 1 hour. In the last 20 minutes or roasting, add the tomatoes.
- 3Let the pork rest for 10-15 minutes, then slice and serve with the tomatoes and pan juices.
Optional: Delicious served with creamy mashed potatoes.
