Adding my favorite red beans and rice recipe. It's adapted from one in a cookbook called Le Bonne Cuisine. Of course I added my own touches.

Slow Cooker Crock Pot

Ingredients

  • 2 c
    dried small red beans
  • ·
    olive oil, extra virgin
  • 1
    onion, chopped
  • 3
    cloved garlic, minced
  • 2
    ribs celery, chopped
  • 1 Tbsp
    worcestershire sauce
  • 1
    bay leaf
  • 1 tsp
    dried thyme
  • ·
    dash old bay seasoning
  • ·
    salt and pepper
  • 2
    ham hocks, smoked
  • 1/2 c
    ketsup
  • ·
    diced ham
  • ·
    cooked rice

How to Make Red Beans and Rice My Way

Step-by-Step

  1. Soak the bean overnight per package directions.
  2. In Large skillet saute onion, garlic and celery in olive oil.
  3. Add to crock pot along with 2 qt water, drained beans, ham hock, worcestershire sauce, bay leaf, thyme, salt and pepper, wine and ketchup. Cook on low 8 hours.
  4. When beans are tender serve over cooked rice and add chopped ham.
