Adding my favorite red beans and rice recipe. It's adapted from one in a cookbook called Le Bonne Cuisine. Of course I added my own touches.

Ingredients

  • 2 cups dried small red beans
  • - olive oil, extra virgin
  • 1 - onion, chopped
  • 3 - cloved garlic, minced
  • 2 - ribs celery, chopped
  • 1 tablespoon worcestershire sauce
  • 1 - bay leaf
  • 1 teaspoon dried thyme
  • - dash old bay seasoning
  • - salt and pepper
  • 2 - ham hocks, smoked
  • 1/2 cup ketsup
  • - diced ham
  • - cooked rice

How To Make red beans and rice my way

  • Step 1
    Soak the bean overnight per package directions.
  • Step 2
    In Large skillet saute onion, garlic and celery in olive oil.
  • Step 3
    Add to crock pot along with 2 qt water, drained beans, ham hock, worcestershire sauce, bay leaf, thyme, salt and pepper, wine and ketchup. Cook on low 8 hours.
  • Step 4
    When beans are tender serve over cooked rice and add chopped ham.
