red beans and rice my way
Adding my favorite red beans and rice recipe. It's adapted from one in a cookbook called Le Bonne Cuisine. Of course I added my own touches.

Ingredients
- 2 cups dried small red beans
- olive oil, extra-virgin
- 1 onion, chopped
- 3 cloved garlic, minced
- 2 ribs celery, chopped
- 1 tablespoon Worcestershire sauce
- 1 bay leaf
- 1 teaspoon dried thyme
- dash old bay seasoning
- salt and pepper
- 2 ham hocks, smoked
- 1/2 cup ketsup
- diced ham
- cooked rice
How To Make red beans and rice my way

Step 1Soak the bean overnight per package directions.

Step 2In Large skillet saute onion, garlic and celery in olive oil.

Step 3Add to crock pot along with 2 qt water, drained beans, ham hock, worcestershire sauce, bay leaf, thyme, salt and pepper, wine and ketchup. Cook on low 8 hours.

Step 4When beans are tender serve over cooked rice and add chopped ham.
