I just threw this together with stuff I had in the house. I do love it when that works out so well!

Ingredients

  • 1 1/2 pounds pork roast, diced into bite-size pieces
  • 1/3 cup flour
  • 1/4 cup canola oil
  • 2-3 large carrots, scraped and sliced
  • 1 large onion, sliced
  • 1/2 cup english peas
  • 1/2 cup frozen corn
  • 3 cups chicken or pork broth
  • 1/2 tablespoon kitchen bouquet browning sauce
  • - salt & pepper to taste
  • fresh chopped parsley (optional)

How To Make ragout of pork

  • Step 1
    Heat oil in deep skillet over medium-high heat. Dredge pork in flour. Add pork, onions and flour to skillet and brown in oil.
  • Step 2
    Pour in broth and browning sauce. Season with salt & pepper. Add carrots.
  • Step 3
    Bring to a simmer. Cover and cook over low heat for 40 minutes.
  • Step 4
    Turn off heat. Add in peas and corn. Stir until thawed.
  • Step 5
    Serve over mashed potatoes or rice.
  • Step 6
    Sprinkle right chopped fresh chopped parsley if desired.
