A quick weeknight stir-fry. **Can substitute Hunan sauce for Hoisin sauce if preferred for a spicier version.

Ingredients

  • 1 pound pork tenderloin or boneless pork chops, thinly sliced into strips
  • 1/4 cup corn starch
  • 1/4 cup water
  • 3 tablespoons oil (vegetable or combination of sesame oil and vegetable oil
  • 2 medium zucchini, sliced (approx. 3 cups)
  • 8 ounces sliced baby bella mushrooms
  • 1/3 cup Hoisin sauce
  • 1 tablespoon toasted sesame seeds
  • red pepper flakes to taste
  • cooked rice, brown or white

How To Make quick & easy pork and veggie stir-fry

  • Step 1
    Cut the pork into thin strips.
  • Step 2
    Mix corn starch and water and thoroughly combine to remove lumps. Add the pork and toss.
  • Step 3
    Heat 2 Tbsp oil in a wok or large skillet and stir-fry until pork is thoroughly cooked. Remove the pork from the skillet and add the remaining oil.
  • Step 4
    Add zucchini and mushrooms to skillet and cook approximately 3 minutes until zucchini is tender. Add pork back to the skillet and add the Hoisin sauce, red pepper flakes, and sesame seeds. Continue cooking until heated through.
  • Step 5
    Serve stir-fry over rice of your choice.
