A quick weeknight stir-fry. **Can substitute Hunan sauce for Hoisin sauce if preferred for a spicier version.

Ingredients
- 1 pound pork tenderloin or boneless pork chops, thinly sliced into strips
- 1/4 cup corn starch
- 1/4 cup water
- 3 tablespoons oil (vegetable or combination of sesame oil and vegetable oil
- 2 medium zucchini, sliced (approx. 3 cups)
- 8 ounces sliced baby bella mushrooms
- 1/3 cup Hoisin sauce
- 1 tablespoon toasted sesame seeds
- red pepper flakes to taste
- cooked rice, brown or white
How To Make quick & easy pork and veggie stir-fry

Step 1Cut the pork into thin strips.

Step 2Mix corn starch and water and thoroughly combine to remove lumps. Add the pork and toss.

Step 3Heat 2 Tbsp oil in a wok or large skillet and stir-fry until pork is thoroughly cooked. Remove the pork from the skillet and add the remaining oil.

Step 4Add zucchini and mushrooms to skillet and cook approximately 3 minutes until zucchini is tender. Add pork back to the skillet and add the Hoisin sauce, red pepper flakes, and sesame seeds. Continue cooking until heated through.

Step 5Serve stir-fry over rice of your choice.
