- 2 1/2 pounds lean ground beef
- 1 pound ground pork
- 1 cup finely chopped onion
- 4 - garlic cloves, finely chopped
- 12 ounces beer
- 8 ounces tomato sauce
- 1 cup water
- 3 tablespoons chili powder
- 2 tablespoons cumin
- 2 tablespoons beef bouillon
- 2 teaspoons oregano
- 2 teaspoons paprika
- 2 teaspoons sugar
- 1 teaspoon cocoa
- 1/2 teaspoon hot sauce
- 1 teaspoon flour
- 1 teaspoon cornmeal
- 1 tablespoon warm water
- 1/2 teaspoon coriander, ground

Step 1In large saucepan or dutch oven, brown half the meat; pour off fat.

Step 2Remove meat.

Step 3Brown remaining meat; pour off all fat except 2 tablespoon.

Step 4Add onion, garlic; cook and stir until tender.

Step 5Add meat and remaining ingredients except flour, cornmeal and warm water.

Step 6Mix well.

Step 7Bring to boil; reduce heat and simmer covered 2 hours.

Step 8Stir together flour and cornmeal; add warm water.

Step 9Mix well.

Step 10Stir into chili mixture.

Step 11Cook covered 20 minutes longer.

Step 12Serve hot.

Step 13Makes 2 quarts.
