Ingredients
- 2 pounds country style pork ribs, trimmed from fat and cut into chunks
- salt and pepper
- 1 tablespoon vegetable oil
- 1 medium onion, chopped small
- 8 cloves garlic, minced
- 2 tablespoons tomato paste
- 1/2 cup dry red wine
- 1 can crushed tomatoes (28 oz)
- 1 cup chicken stock
- 1 teaspoon dried oregano
- 1/8 teaspoon red pepper flakes
- 2 tablespoons brown sugar
- 1 pound pasta of choice
- fresh basil or parsley, for garnish
How To Make pressure cooked pork ragu

Step 1Place the oil in the Instant Pot. Select saute. Season the pork with salt and pepper. Brown the pork on all sides. Add the onion and cook until onion is browned. Add the garlic and tomato paste. Cook 30 seconds. Add the red wine and let most evaporate.

Step 2Add the remaining ingredients except the pasta and herbs for garnish. Select pressure cook. Secure the lid and pressure cook on high for 20 minutes. Let release naturally for 15 minutes then quick release.

Step 3Stir and break up meat. Skim off excess oil. If the sauce is a bit thin, add more tomato sauce to thicken. Serve over pasta of choice and garnish with herbs.

Step 4This is also good with some Parmesan cheese.
