potluck casserole

I came up with this recipe on the spur of the moment. I wanted to cook something different and this is what I came up with. The 1st time I made it I used ground pork; however, I'm sure it's great with ground turkey or beef. Enjoy!!

Ingredients
- 2 pounds ground pork (or other ground meat)
- 2 cups cooked yellow rice
- 2 cans mixed vegetables
- 2 packages brown gravy mix
- pinch garlic salt
- pinch seasoned salt
- - crushed saltines or ritz crackers
How To Make potluck casserole

Step 1Preheat oven to 375 degrees. Cook yellow rice according to package directions. While rice is simmering, brown the meat and then drain it.

Step 2Prepare brown gravy according to package directions and add pinch of garlic salt and seasoned salt. I like to use Lawry's Seasoned Salt or Season All.

Step 3In a greased 13x9 casserole dish, spread the rice in the bottom. Then top it with the mixed vegetables. Then spread the meat on top. Pour the gravy on top and then bake for approximately 15 minutes or until heated through. Sprinkle crackers on top and place back in oven for another 5 minutes or until crackers are browned.Then serve.
