  • 2 c
    ham, cooked and cubed
  • 8 medium
    potatoes, peeled and sliced
  • 1/4 c
    onion, finely chopped
  • 1/2 c
    all purpose flour
  • 2 c
  • 3 Tbsp
    bread crumbs, dry
  • 1 Tbsp
    butter, melted
  • 2 Tbsp
    parsley, fresh and chopped

How to Make Potato-Ham Scallop


  1. Place half the ham in a 2 quart casserole; cover with half the potatoes and half the onion.
  2. Sift half the flour over; season with salt and pepper.
  3. Repeat, layering ham, potatoes and onion; season with additional salt and pepper.
  4. Sift remaining flour atop; pour milk over all.
  5. Bake covered at 350 until potatoes are nearly tender, 1 to 1 1/4 hours; uncover.
  6. Combine bread crumbs and melted butter; sprinkle atop casserole.
  7. Top with parsley and bake 15 minutes longer.
