Ingredients

  • 2 cups ham, cooked and cubed
  • 8 medium potatoes, peeled and sliced
  • 1/4 cup onion, finely chopped
  • 1/2 cup all purpose flour
  • 2 cups milk
  • 3 tablespoons bread crumbs, dry
  • 1 tablespoon butter, melted
  • 2 tablespoons parsley, fresh and chopped

How To Make potato-ham scallop

  • Step 1
    Place half the ham in a 2 quart casserole; cover with half the potatoes and half the onion.
  • Step 2
    Sift half the flour over; season with salt and pepper.
  • Step 3
    Repeat, layering ham, potatoes and onion; season with additional salt and pepper.
  • Step 4
    Sift remaining flour atop; pour milk over all.
  • Step 5
    Bake covered at 350 until potatoes are nearly tender, 1 to 1 1/4 hours; uncover.
  • Step 6
    Combine bread crumbs and melted butter; sprinkle atop casserole.
  • Step 7
    Top with parsley and bake 15 minutes longer.
