from ambest cookbook, very good recipe, calls for a little time, but well worth it. This recipe came out of Lubbock, Tx. I am leaving prep time to how long it takes a 1 1/2 lb. pork shoulder, cooked and cubed.

Ingredients For posole

  • 1
    onion, chopped
  • 2
    cloves garlic, peeled and chopped
  • 1 1/2 lb.
    pork shoulder, cooked and cubed or shredded
  • 2
    cans white or yellow hominy, rinsed and drained
  • 1
    can diced tomatoes
  • 1
    can diced green chililes
  • 4-5
    cans chicken broth
  • 1
    cup green chilies, chopped
  • 1/2 tsp
    cumin
  • salt & pepper to taste

How To Make posole

  • 1
    Mix all ingredients and cook over low to medium heat until onions are tender and flavors are blended.
  • 2
    NOTE: Fresh or canned chopped jalapeno may be added to taste.
