This recipe was created by my son Alec...I happen to have shredded left over pork and wanted to make something creative with it...so he came up with Porkadilla...can I say genius?

Ingredients

  • 2 - large flour tortillas
  • 1 cup shredded pork
  • 1/2 cup shredded mexican cheese mix(comes in a package)
  • 1/2 cup salsa...to your taste..hot or mild
  • 1 tablespoon vegetable oil

How To Make porkadilla

  • Step 1
    heat the shredded pork, add the vegetable oil to a skillet on medium heat, place 1 flour tortilla in the skillet, add the shredded pork & the shredded cheese.
  • Step 2
    cover with the other flour tortilla, pressing down gently with a spatula, a few mins...carefully flip and brown another few mins... and the cheese melts.
  • Step 3
    can be a meal or a snack...serve with salsa
